This is my working lunch today!
I made some fajita mix with yellow onions, red + green peppers, nama shoyu, garlic and olive oil. I let that marinade and soften overnight.
I mixed some guacamole here at work with an avocado (almost spoiled but still firm - I hate that!), garlic salt, onions and lime.
I placed the guac and some fajita mix over romaine leaves and created a wrap. Easy, healthy and yummy.
