What you need:
- 1 cup canned pumpkin
- 1/2 cup, plus 2tbs packed brown sugar
- 1/2 cup low fat buttermilk
- 1 egg white
- 1 tbs melted smart balance spread
- 1 tsp vanilla extract
- 1/2 cup unbleached all purpose flour
- 1/2 cup whole-wheat pastry flour (or whole-wheat flour)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp pumpkin pie spice
- 1 tsp salt
- 3 tbs dark chocolate chips, plus more to top donuts with
- 1/4 cup powder sugar for dusting.
- Cooking spray
- Preheat oven to 350
- Spray donut molds with cooking spray.
- Combine first 6 ingredients in a large bowl.
- Mix together dry ingredients. Add dry ingredients to the wet ingredients and mix well.
- stir in chocolate chips.
- Pour batter into a pipping bag, or a large ziplock bag, and cut off the tip of the bag. Squeeze mixture into molds.
- Bake for 20 minutes, or until toothpick comes out clean.
- Cool on a cooling rack, and lightly dust with powdered sugar.
